1. I use a Nordicware Platinum 12 CUP bundt pan, which I find works best.  I’m sure there are comparable pans on the market, just make sure it is a 12 CUP pan and that it has been WELL GREASED.  I have used cooking spray (the most convenient), vegetable or canola oil (the healthier option), but the method that yields the prettiest and tastiest cake is butter-flavored Crisco, which I apply with a pastry brush to be sure I get it into every crevice of the pan.
  2. For optimum freshness, consume the cake within 3 days of baking, as GF baked goods typically have a shorter shelf life.  If kept in an airtight container, I’ve found that a quick 10-15 seconds in the microwave will revive the moistness, even after 5-7 days.  Cakes at my house typically aren’t around that long!  If you find that you do have more than you can eat before expiration, just wrap individual slices well and freeze.  It thaws very nicely in the microwave, heated for about 45 seconds.
  3. I have found that many Celiacs are also dairy intolerant, so please note that if dairy is an issue for you, this cake can easily be made with a milk and/or butter substitute. For a vegan cake, you can use an egg, milk, and butter substitute.   It is also very low in sodium, for those of you that may be concerned with salt intake.

This cake mix can be made into cupcakes, layer cake, or sheet cake.  One bag of mix will produce 16 standard-sized cupcakes, a 9 inch layer cake, a sheet cake made in a 1/2 sheet pan for a thin cake or a 9 X 13 pan for a thicker cake.  Based on my oven’s settings, I bake each of them at 350 degrees, for the following times, but recommend that you set your timer for a few minutes less initially and continue baking until a toothpick inserted in the center comes out clean:

Cupcakes- 21 minutes

Layer Cake- 22 minutes

1/2 sheet pan cake- 22 minutes

9 X 13 sheet cake- 28 minutes
