Blueberry Biscuits

In addition to the biscuit mix, you will need:

  • 1 cup fresh blueberries (or thawed frozen berries)
  • 2 tablespoons turbinado sugar
  • 1 1/2 cups powdered sugar
  • 3-4 tablespoons milk (or milk substitute)
  • 1 teaspoon GF vanilla

Mix biscuit dough as directed and fold in the berries; continue to follow directions on biscuit mix package.  After initial baking time and biscuits are brushed with melted butter, sprinkle on the turbinado sugar and continue to bake until biscuits are golden brown, watching carefully not to burn the sugar topping.  In a saucepan over medium heat, combine powdered sugar, milk and vanilla and whisk until smooth.  Mixture should be fairly thin- if not, add one tablespoon at a time until it is the desired consistency.  Drizzle glaze over hot biscuits and devour immediately!

Cinnamon Sugar Biscuits

In addition to the biscuit mix, you will need:

  • 2 teaspoons cinnamon + 2 teaspoons cinnamon
  • 1/4 cup granulated sugar
  • 2 tablespoons turbinado sugar

In a large mixing bowl, combine 2 teaspoons cinnamon and granulated sugar, then add dry biscuit mix and stir until well combined. Prepare as directed on the package.  In a small bowl, combine turbinado sugar and 2 teaspoons cinnamon and set aside. After initial baking time and biscuits are brushed with melted butter, sprinkle the turbinado sugar/cinnamon mixture on top of biscuits and continue to bake per package instructions until biscuits are golden brown, watching carefully not to burn the sugar topping.

Spicy Cheddar Biscuits

In addition to the biscuit mix, you will need:

  • 1 cup sharp cheddar cheese, grated
  • 1 teaspoon cayenne pepper (or more, depending on your tolerance for heat)
  • an additional 1/4 cup buttermilk (package calls for 1 1/2 cups, so for this recipe you will use 1 3/4 cups)

In a large mixing bowl, combine dry biscuit mix and cayenne pepper and mix well so as to evenly distribute the heat. Continue mixing per package directions, except increase buttermilk to 1 3/4 cups and fold cheddar cheese in. Bake per package directions and enjoy.  This variation makes great breakfast sandwiches, filled with egg and sausage or bacon.
